3 eggs
1 bunch asparagus
1tsp chopped chives
Knob of butter for frying
Grated Parmesan
1. Make a simple omelette by whisking together the eggs and chives. Season well.
2. Heat a knob of butter in a heavy-based frying pan over a medium heat and, when bubbling, add the eggs.
3. When the egg has just set, place tender cooked asparagus and some grated Parmesan over one half of the eggs in the pan.
4. Fold the omelette over and cook until heated through and set.
