4 slices of Italian-style
white bread
Crushed clove of garlic
4 large, ripe plum tomatoes
A few torn basil leaves
2-3tbsp olive oil
2tsp balsamic vinegar
Salt & pepper
1. Toast the bread and rub the slices with a crushed clove of garlic.
2. Combine the chopped plum tomatoes, torn basil
leaves, olive oil and balsamic vinegar.
3. Season well, then spoon the tomatoes over each slice of bread and serve immediately.
