COOKING
300g (10oz) white fish fillet
(red snapper, halibut or cod)
1 mango
½ cucumber
½ papaya
2 avocados
1 mild red chilli, finely sliced
1 handful fresh mint leaves
1 handful fresh coriander
leaves
Juice of 3 limes
Juice of ½ orange
2tbsp honey
4tbsp extra virgin olive oil
1. Clean and cut the fish into small pieces. Cut the mango, cucumber, papaya and avocado into similar size pieces.
2. Combine the fish, mango, cucumber, papaya, avocado, chilli and herbs. Season with a little salt and black pepper.
3. Combine the citrus juice, honey and olive oil in a screw-top jar and shake well to combine. Taste to check the seasoning. Pour the dressing over the fish mixture and leave to marinate in the fridge for 10 minutes before serving.
