CHICKEN: CHINESE CHICKEN WITH CASHEWS

Chicken: Chinese chicken with cashews

1 egg white
2tsp cornflour
4 skinless chicken breasts, cut
into bite-size pieces
2tbsp peanut or vegetable oil
1 clove garlic, chopped
2tsp chopped ginger
100g (3½oz) unsalted cashews
1½tbsp soy sauce
1½tbsp dry sherry
1tsp caster sugar
3 spring onions, finely shredded, for garnish
1. Mix the egg white and cornflour with a teaspoon of salt. Add the chicken and mix together well. Cover and refrigerate for 10 minutes.
2. Meanwhile, heat 2tsp of the peanut oil in a large heavy frying pan or wok until hot. Add the cashews and stir-fry until golden. Remove from the pan with a slotted spoon and set aside. Pour off any oil and wipe the frying pan clean with kitchen paper.
3. Heat the rest of the oil until hot. Add the chicken, garlic and ginger. Stir-fry until the chicken starts to brown (about 1-2 minutes), then add the soy sauce, sherry, sugar and 2tbsp water. Cook, stirring, until heated and the sauce thickens a little and coats the chicken. Add a little more water if necessary. Add the cashews and cook until hot. Season to taste, top with the spring onion and serve with plain boiled rice.
