PIZZA: CHORIZO

Pizza: Chorizo
SERVES 2

2 ready-made pizza bases
or flat breads
1tbsp olive oil
4-5tbsp tomato pizza topping
1 clove garlic, chopped
250g (8oz) mozzarella cheese, thinly sliced
100g (3½oz) cherry tomatoes, halved
10 thick slices of chorizo (or pepperoni if preferred)
Extra virgin olive oil, to drizzle
2tbsp fresh basil, roughly chopped
1. Heat the oven to 220°C (gas mark 6). Place a large baking sheet in the oven to heat. Spoon enough pizza topping to lightly cover each base. Sprinkle with the chopped garlic.
2. Top each pizza with the sliced mozzarella, leaving a 2cm (¾in) border around the edges. Scatter the halved cherry tomatoes and the chorizo over the bases, season well with salt and freshly ground black pepper, and drizzle with a little extra virgin olive oil.
3. Remove the baking sheet from the oven and carefully lay the two pizzas on it. Transfer to the oven and cook for approximately 15 minutes, or until the pizza bases are crisp and the cheese is melted and lightly coloured. Remove from the oven and sprinkle with basil. Cut each pizza into quarters and serve.
