1 bunch of asparagus
Extra virgin olive oil
Feta cheese
Roughly chopped mint
Juice of a lemon
Salt and freshly ground black pepper
1. Heat a ribbed grill pan over a high heat. Lightly brush each spear of a bunch of asparagus with extra virgin olive oil and cook in a single layer for 4-6 minutes, turning occassionally, or until tender and slightly charred.
2. Combine the grilled asparagus with crumbled feta cheese and roughly chopped mint.
3. Drizzle with a little extra virgin olive oil and squeeze over some fresh lemon juice. Season with salt and freshly ground black pepper.
