400g (13pz) linguine
125g (4oz) mascarpone
Knob unsalted butter
3tbsp freshly grated Parmesan
100g (3½oz) ham, cut into strips
Handful fresh basil leaves, torn
Extra freshly grated Parmesan, to serve
1. Cook the linguine in a large saucepan of boiling salted water according to the instructions on the packet, or until the pasta is al dente. While the pasta is cooking, warm the mascarpone, butter, freshly grated Parmesan and ham in a small saucepan over a low heat and season well with salt
and freshly ground black pepper.
2. When the pasta is cooked,
drain it well and return to the
large saucepan. Pour over the mascarpone and ham sauce
and stir through the basil. Serve with extra grated Parmesan.
