375g (12oz) ready-rolled puff pastry
1 clove garlic, finely chopped
4 very large flat mushrooms, or 8 medium ones, stems removed
30g (1oz) butter
150g (5oz) log of goats cheese, cut into 8x1cm (½in) slices
2tbsp chopped fresh flat-leaf parsley
green beans, to serve
1. Heat the oven to 200ºC (gas mark 6). Cut the pastry into quarters - it should give you four portions, each about 12x18cm (4¾x7in). Place the four pastry pieces on a lightly greased baking sheet. Using a sharp knife, score along the pastry a centimetre in from the edge, making sure the knife doesn't cut all the way through.
2. Top each piece of pastry with garlic and 1 or 2 mushrooms (making sure you keep them inside the border). Put a dollop of butter on the centre of each mushroom and season well with salt and plenty of freshly ground black pepper.
3. Place in top half of the oven and bake for 15 minutes. Remove and top each mushroom with a slice of goats cheese. Return to the oven and continue to cook for an extra
5 to 7 minutes, or until the cheese has puffed up a little and pastry is golden and the edges risen. Sprinkle with parsley. Serve hot, accompanied with a green salad or some steamed green vegetables.
QUICK TIP
You can use any variety of mushroom here. If using smaller mushrooms, sauté them first in a little butter before sitting on the pastry.
