FISH: POACHED SALMON

Fish: Poached salmon
SERVES 1

1 salmon fillet
Chives
Lime juice
Mayonnaise
1. Brush a salmon fillet with a little oil and season with salt and pepper
2. Wrap it securely in foil - the package must be watertight
3. Pop into a saucepan of cold water, bring to the boil and simmer for 5 minutes. Remove the saucepan from the heat and leave it to sit for 5 minutes. Remove the package and unwrap it.

TIP

Stir chopped chives and a squeeze of lime juice into some good-quality mayonnaise and serve alongside the salmon
