FISH: SALMON TORTILLA, MEXICAN-STYLE

Fish: Salmon tortilla, Mexican-style
SERVES 1

1 salmon fillet
1 soft tortilla
1 avocado, chopped
1 tomato, chopped
1 spring onions, sliced
½ red chilli, sliced
Juice of 1 lime
3tbsp sour cream
1. Brush a soft tortilla with water and put in an oven heated to 180°C (gas mark 4) for 5 minutes
2. Lightly brush a salmon fillet with oil and roast for a further 8-10 minutes
3. Combine chopped avocado, chopped tomato, sliced spring onions, sliced red chilli, the lime juice and sour cream in a bowl and season
4. Fill the tortilla with the mixture, then flake the cooked salmon over the top. Roll up and serve
