8-10 tomatoes
Olive oil
Seasoning
1. Cut the tomatoes in half lengthways and place cut-side up on a lightly greased oven tray.
2. Drizzle with olive oil and season. Place in an oven heated to 120C (gas mark ½)
for 1½-2 hours, or until the tomatoes are lightly dried and darkened but still retain some moisture.

in antipasti, sandwiches, salads or tossed through cooked pasta.
