500g (1lb) ripe tomatoes
2 chopped cloves garlic
3tbsp shredded basil
4tbsp extra virgin olive oil
To serve
Extra virgin olive oil
Freshly grated Parmesan
1. Dice the tomatoes, discarding any of the seeds.
2. Place in a bowl with the chopped garlic, shredded basil and extra virgin olive oil.
3. Cook enough pasta
for 4 people, drain and return it to
the saucepan.
4. Stir in the tomatoes, season to taste and serve.
