250g (8oz) cherry tomatoes
4 large, ripe garden tomatoes
1 chopped clove garlic
Chopped fresh basil
3tbsp olive oil
1-2tbsp balsamic vinegar
1. Halve the cherry tomatoes, cut the 4 garden tomatoes
into quarters, and place them in a bowl with 1 chopped clove garlic
and chopped fresh basil.
2. Stir in the olive oil and balsamic vinegar and mix well.
3. Let it sit for up to an
hour, stirring occasionally - this will intensify the flavours.
